Whether you’re hosting a gathering, bringing a dish to a potluck, or simply craving something sweet, this recipe is a guaranteed crowd-pleaser. With moist cake, a burst of strawberry flavor, and a creamy topping, these cupcakes are as delicious as they are beautiful. Let’s dive into the recipe!
Ingredients:
- 1 box White Cake Mix (I prefer Duncan Hines, but any brand will do)
- 1 cup Water
- 1/2 cup Vegetable Oil
- 3 Egg Whites
- 1 box (3.4oz) Strawberry Jell-O
- 1 cup Hot Water
- 1/2 cup Cold Water (or ice cubes)
- 1 box (3.4oz) Vanilla Instant Pudding
- 1 cup Milk
- 1 container (8oz) Cool Whip
- Fresh Chopped Strawberries
Instructions:
- Preheat your oven to 350ºF and line muffin pans with cupcake liners. Lightly mist the liners with cooking spray. In a mixing bowl, combine the cake mix, water, oil, and egg whites. Using an electric hand mixer, gently mix until combined, then increase the speed to medium and mix for about 2 minutes until smooth and fluffy.
- Scoop the batter into the liners, filling each about 2/3 of the way. Bake in the oven for 16-20 minutes. Check for doneness by inserting a toothpick into the center—if it comes out clean, they’re ready. Remove the cupcakes from the oven and let them cool on a rack for 10 minutes.
- While the cupcakes are cooling, prepare the Jell-O. Mix the hot water and Jell-O powder in a large measuring cup until fully dissolved. Add the cold water (or ice cubes) and stir until the mixture measures 1 1/2 cups.
- Once the cupcakes have cooled slightly, poke holes into each cupcake using a fork, chopstick, or skewer. Carefully pour the Jell-O mixture over each cupcake. Cover and refrigerate the cupcakes for 1-2 hours to let the flavors set.
- In a medium bowl, whisk together the vanilla pudding mix and milk until thick and smooth. Gently fold in the Cool Whip until well combined.
- Once the cupcakes have set, spread the frosting over each one. For an extra touch, use a pastry bag or ziplock bag to pipe the frosting on top. Sprinkle fresh chopped strawberries over the frosting.
