Ingredients:
- 2 1/4 cups All-Purpose Flour
- 1 small package (3.4oz) Vanilla Instant Pudding Mix
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Unsalted Butter, at room temperature
- 3/4 cup Light Brown Sugar
- 1/4 cup Granulated Sugar
- 1 Egg
- 1 Egg Yolk
- 1 teaspoon Vanilla Extract
- 1 1/2 cups Semisweet Chocolate Chips
Instructions:
- Preheat your oven to 375ºF. Line two baking sheets with parchment paper or baking mats and set them aside.
- In a medium bowl, whisk together the flour, pudding mix, baking soda, and salt. Set aside.
- With an electric mixer on medium speed, cream together the butter and both sugars until light and fluffy, for about 3 minutes. Scrape the sides of the bowl as necessary. Add the egg, egg yolk, and vanilla extract, and mix until combined.
- Reduce the mixer speed to low and gradually add the dry ingredients. Mix until just combined. Using a rubber spatula, fold in the chocolate chips.
- Form dough into balls using a medium cookie scoop or about 2 tablespoons of dough per cookie. Place on prepared baking sheets about 2 inches apart.
- Bake until the outside edges are light golden brown and the middles are still puffy, for about 10 to 12 minutes.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes, then move cookies to a wire rack to cool completely.
- Store at room temperature in an airtight container for up to 5 days. Makes: 30 cookies.
